Superfood Summer Porridge
Wake up to the taste of tropics with this summery porridge recipe. The sweetness of the mango combined with the fresh, earthy flavour of pistachios will have you jumping out of bed with joy.
- 1/2 cup of porridge oats
- 1/2 cup rolled oats
- 1/2 tablspoon chia seeds
- 1/2 tablespoon Maple syrup
- 2 cups coconut milk
- 1/2 cup mango, diced
- Handful of pistachios
METHOD1. Prep the mango puree by giving the mango a few pulses in a blender, leaving a few chunks (texture is key!)
2. Cook the oats, chia seeds, sweetener and coconut milk on low heat until it starts to bubble (about 5 mins).
3. Whilst it’s cooking, lightly toast the pistachios in another pan (or in the oven) for a few minutes tossing them so they don’t burn - just until you can smell the aromas. Remove onto a plate, let cool slightly and then slice finely.
4. Take the pot off the heat and give it a vigorous stir whilst you bowl and top it up!
Here we’ve used a mix of porridge and rolled oats. Rolled oats give it a good bite, and the porridge oats make it creamy.
Why not try a handful of sesame seeds for a bit of added crunch? A drizzle of tahini would also be delicious! Freestyle and add in whatever you’re craving.
